Columbian born chef (and former personal trainer) David Michael’s shares stories and recipes that date back hundreds of years. Taking recipes from his mother, his grandmother and his great grandmother, David has developed and recreated these delicious Latin dishes for the tables of today David Michaels arrived in Australia with his family in 1986 from Bogota. Growing up in Sydney & becoming a chef, David travelled to over 27 countries, living and working in 5 countries before returning to Sydney to start his Latino fast food business ‘Pablo’s Kitchen’, introducing healthy, fast food to Sydney.
Latin food wasn’t easy to find outside of South America so David was one of the first to introduce Latin American style fast food to Sydney, Australia. Hitting the office parties &
building great relationships with respected brands & companies, the business evolved into an online delivery & catering business, introducing Latino favourites like empanadas, arepas, ceviche & tacos to Sydney.
Working in England, Spain & parts of Latin America David collected effective ways of cooking honest food in an organised fashion, focusing on Mexican & Colombian street food. With his mantra of ‘Fail to plan & you’re planning to fail’ David has juggled epic tasks such as making up to 250kgs of guacamole at once, alongside 250kg of Peruvian style ceviche & served literally thousands of Colombian empanadas at one time.
