Latin food wasn’t easy to find outside of South America so David was one of the first to introduce Latin American style fast food to Sydney, Australia. Hitting the office parties & building great relationships with respected brands & companies, the business evolved into an online delivery & catering business, introducing Latino favourites like empanadas, arepas, ceviche & tacos to Sydney. Working in England, Spain & parts of Latin America David collected effective ways of cooking honest food in an organised fashion, focusing on Mexican & Colombian street food. With his mantra of ‘Fail to plan & you’re planning to fail’ David has juggled epic tasks such as making up to 250kgs of guacamole at once, alongside 250kg of Peruvian style ceviche & served literally thousands of Colombian empanadas at one time.
